You’ve been in the news recently about a few expansion ideas for Black Sheep, and this certainly isn’t your first experience downtown. How did the Intuition deal come about?

It came out of good timing. Intuition needed someone to handle the food service side of the operations. We luckily have a long standing relationship with them and we felt very honored that they considered us. We used to host Intuition Beer dinners at Chew when both companies were just starting out. So it’s pretty cool that it came full circle.

What made sense about this location, given the skepticism that some have about the area surrounding the Arena and Baseball Grounds?

With a brand like Intuition and the new Manifest distillery we believe that the entirety of the project could be a catalyst for positive development in the surrounding area as well as for downtown in general.

Tell us about the menu for the new Intuition location. What kind of things are you featuring? What is your overall theme?

The overall philosophy behind the menu is inspired by beer halls, bar menus and casual food we really care about. Waylon, Allan and I had fun conceiving the menu. With Black Sheep and Orsay we have a very structured approach to the menu, at BLK SHP at Intuition we are able to do some fun food and get to play with concepts we usually can’t at the other spots.
